Pan Seared Chicken with Smashed Potatoes Recipe



Ingredients:



1 ½ lbs. baby yellow potatoes



1 tsp salt



1 lb. chicken breast



4 tbsp vegetable oil



2 tbsp butter



2 tbsp McCormick Garlic Asiago All-Purpose Seasoning Blend



Instructions:



Place 1 ½ lbs. baby yellow potatoes and 1 tsp salt in large saucepan. Add water to cover.



Bring to boil on high heat. Reduce heat to low; simmer 15 to 20 minutes or until potatoes are very tender when pierced with a fork. Drain potatoes. Let stand until cool enough to handle.



Place potatoes on large cutting board. Smash each potato with the back of a heavy spatula, bottom of sturdy mug or small pan. Set aside.



Season 1 lb. thinly sliced chicken breast cutlets on both sides with 1 tbsp of seasoning.



Heat 2 tbsp of vegetable oil in large deep skillet on medium heat until shimmering.



Add chicken; cook 3 to 5 minutes per side until golden brown and cooked through. Remove from skillet and keep warm.



Heat remaining 2 tbsp vegetable oil and 2 tbsp butter in same skillet on medium-high heat.



Add potatoes; cook about 3 minutes per side or until golden brown and crispy. Remove from skillet.



Sprinkle evenly with remaining 1 tbsp seasoning.



To serve, thinly slice chicken breast and serve with smashed potatoes.
